Well, Sola's actually basically a real boy at this point. He's got a flesh and blood body and an honest to goodness soul, so he's as close to normal as he's ever been. He would definitely find her interesting though, and his story might interest her, but he can't sense people that aren't human so much. He'll get a little bit of a funny feeling, but it's not as overt as with someone actually talented in magic.
That being said, I'd love to have them meet and be bros! Or even not bros. Despite having a generally good guy attitude (learned, mostly), Sola still feels evil in that he was created initially by dark magic. If Saber can feel that then you have my full permission to have her jump to any conclusion she might.
Saber's sensing is kind of vaguely explained in canon, and the only thing that seems concrete is she can sense people nearby (specially those with more energy/magic in them). So, for the most part, I don't have her actively sensing people by evil or good.. but her instinct will cause her to be worried if someone is just radiating negativity.
Bros or not bros is fine, too! It totally depends what conversations are had at first that decide how Saber feels about someone. She's very stubborn and chivalrous, so if someone immediately makes it obvious they're a rotten egg, she'll come to dislike them quite quickly and the impression can last for a while. (Also if they're sexist towards her in anyway, since she was a king and knight, etc..)
If he wasn't approaching Saber with negative feelings/reasonings, she'd never know at all he was created by dark magic unless he told her. I'd likely have her feel a slight "hmmm" when he approached, but if he was pleasant, she'd get over it quickly.
